2 Large ripe plantain (diced)
5 – 6 large eggs
One medium carrot (chopped)
One medium red bell pepper (chopped)
Green beans, spring onions (chopped)
One medium green bell pepper (chopped)
1 medium Onion (chopped)
Sausage (sliced)
Fish (mashed)
Seasoning cubes (I always use Knorr cubes)
Onion (chopped)
Vegetable oil for frying
Remember to be flexible in your cooking, substitute ingredients you don’t have for the ones you have access to. Also, add some ingredients you love… after all cooking is so much fun.

Fry the diced plantain in vegetable oil and set aside.
In a pan, add 2 -3 tbsp of veg oil and fry the chopped onion for a few seconds.
Add the remaining chopped veggies to the pan and stir-fry for 2-3 minutes (don’t forget to add knorr cube and salt to taste).
Add any other extras (Fish, sausage e.t.c).
Add the fried dodo and stir on low heat.
Now is a good time to break the eggs, season lightly, add a pinch of salt and whisk.
Make sure the contents of the pan are very well mixed and levelled.
Still on very low heat, pour the whisked eggs all over the contents of the pan.
Cover the pan and let it cook on low heat for about 5 minutes
If you would like to use an oven, preheat the oven and transfer the pan to the oven after 5 minutes.
If you would rather not do without the oven, that’s fine, just elongate the cooking time to about 10 minutes (still on low heat).
After the allocated time, remove the pan from heat and let it cool for 5 – 10 minutes.
After 5 – 10 minutes, transfer the dodo frittata to a flat plate or tray and using a pizza cutter or a knife cut the dodo frittata.
Enjoy dodo frittata with ketchup, chicken or alone.
