Hi people, hope you all missed me like I missed you. Today's recipe is STIR - FRY,
You can serve stir - fry with rice, salad, and a whole lot of other delicacies. I served mine with beans.

1 large green bell pepper (green tatashe)

4 large red bell pepper (tatashe)

2small onion bulbs

Vegetable oil

Smoked fish

Seasoning cube

1 Plantain

Slice the peppers.

Chop the onions.

Shred the smoked fish.

Slice the plantain into strips (i.e long and thin) then fry in vegetable oil. Have you noticed that when you slice plantain long before frying it makes it soft, it loses its crispiness and becomes kind of sticky? I love my plantain crispy so I only slice when I’m ready to fry.

Fry onions in 3 – 4 tablespoons of veg oil.

Add the sliced pepper, smoked fish, a seasoning cube and salt.

Cook for 7 – 9 minutes then add  of the fried plantain and simmer for a minute.

Serve the stir - fry, sit back and give your palate a treat!

You can be totally creative with the stir - fry by substituting some ingredients.
