HOW TO BAKE MOIN MOIN


BAKED MOIN MOIN RECIPE


Hi guys, it’s good to be posting here after such a long while and I am sure you guys will pardon my inconsistency; I have been quite busy. I have a lot of posts to share with you all and I will as soon as I get to type them. Stay cool.

Moin moin (bean pudding) is a popular delicacy among Nigerians which could be taken solo as a snack or with a lot of dishes some of which are pap, rice, custard, cassava flakes (garri) e.t.c. In this post, I will be sharing the recipe for my oven baked moin moin. Moin moin used to be wrapped in leaves then cooked in a pot containing water or cooked in containers. Ways to bring out the best in your cooking keeps increasing, one of which is baking your moin moin. Let’s get down to the recipe of oven baked moin moin.

INGREDIENTS

1 cup of beans

½ cup of vegetable oil

3 Chilli or Paprika (paprika preferably)

3 Scotch bonnet pepper

Seasoning cubes (Knorr cubes)

Salt

2 medium sized onions

3 heaped tablespoons of crayfish

2 Eggs (boiled then sliced)

Boiled fish (mashed)

PROCEDURE

·        Peel the beans and soak for a while to ready it for the blender. Soaking makes the beans tender. I like to soak for 15 – 20 minutes in cold water but 10 minutes or less in warm water. Some people leave their beans unpeeled so feel free to use unpeeled beans if that is your style.

·        To the beans add; paprika, scotch bonnet pepper, crayfish, one of the onions and some water then blend until smooth.

·        Chop the other onion, add chopped onion, mashed fish, eggs, seasoning cubes, and salt to the beans batter. Mix well. You can add in your favorite seasoning like garlic paste, ginger, and turmeric e.t.c.


·        Get baking tins ready or aluminum foil plates. Grease baking tins with oil to prevent sticking.  

Preheat the oven at 150oc.

·        Fill ¾ of the baking medium (baking tin/aluminum foil plates) with beans batter and arrange in an oven tray then place in the oven, let it bake for 30 – 45 minutes. You could add little water (¾ cup) to the oven tray to aid the baking process. 

·        Remove from the oven after 30 – 45 minutes and let it cool before removing from the baking tins.

·        Your delicious moin moin is ready.

·        Serve moin moin and enjoy.

EQUIPMENT GIST: As an advocate for clean and healthy eating I feel obliged to add that too frequent use of the microwave could be harmful. The microwave emits radiations which could serve as a threat to our body.
